On November 9, the 2025 China Yellow Rice Wine T8 Summit, hosted by the China Alcoholic Drinks Association and organized by Zhejiang Tapai Shaoxing Wine Co., Ltd., was grandly held in Shaoxing. Professor Mao Jian, Deputy Director of the Yellow Rice Wine Branch of the China Alcoholic Drinks Association and Director of the Technical Committee at Jiangnan University, delivered a technical report titled "High-Value Shaping and Digital Future of the Yellow Rice Wine Industry." Grounded in data and driven by technology, Mao analyzed industry pain points, covering the current state and emerging trends of yellow rice wine, establishing an evidence chain for the category, and leveraging AI in sensory evaluation and wine design. He systematically outlined directions for the industry's breakthrough and future growth.

Mao noted that with advancements in mechanization and automation, the yellow rice wine market experienced rapid growth over the past decade. However, since 2016, it has faced challenges such as limited market volume, rising brand value, and growth in the mid-to-high-end segment, making quality and efficiency improvements urgent.

In recent years, regional production zones have gained prominence. Shaoxing, as a traditional hub, has seen steady but slow growth, lagging in nationwide expansion. Meanwhile, Fangxian has emerged as the second-largest production area, with annual industrial output exceeding ¥4.5 billion. Other regions, such as Shanxi, Shanghai, Jimo, and Jiangsu, are also exploring new opportunities. Despite progress, the industry's regional influence still trails behind that of baijiu.

The demographic shift toward middle-aged and elderly consumers (over 45) is driving demand. By 2030, those aged 60+ will account for 25% of the population, with a life expectancy of 80.2 years. This group prioritizes brand prestige, cultural resonance, and quality, fueling the rise of "silver economy" consumption. E-commerce penetration among those over 50 has reached 69.8%, presenting significant growth potential for yellow rice wine.

Mao emphasized positioning yellow rice wine as a "living cultural heritage" backed by scientific evidence to overcome market challenges and redefine its value. By blending millennia-old wisdom with cutting-edge technology, the industry can establish itself as a unique global category with both historical depth and scientific innovation.

The low-alcohol beverage market is booming, with a 25% CAGR, projected to exceed ¥74 billion by 2025. Baijiu brands like Luzhou Laojiao and Wuliangye have introduced lower-ABV products, while beer makers target the premium segment with higher-alcohol offerings. Yellow rice wine must explore dual alcohol-level expansion to capture growth.

Innovative consumption scenarios, such as premium cocktail bases and customizable blends, can attract younger consumers. Sweet flavors, diverse profiles, and flexible drinking occasions—from instant consumption to casual enjoyment—enhance appeal.

Mao proposed a "vintage authentication model" to standardize and trace aging claims, leveraging big data and AI for cross-regional, cross-brand sampling. This approach ensures transparency and supports premiumization.

Key strategies include strengthening evidence chains for pricing, highlighting cultural and regional heritage, and advancing scientific research. Microbial studies, flavor profiling, and health benefits (e.g., polysaccharides, polyphenols) should form the basis of premium positioning.

AI can revolutionize sensory evaluation and blending, shifting the industry from experience-based to data-driven practices. Technologies like e-noses and spectroscopy enable rapid compound analysis, while AI algorithms classify flavors with precision. International collaborations, such as Sweden’s AI-developed whisky, demonstrate the potential for innovation.

Looking ahead, Mao envisions AI-driven breakthroughs in health-enhanced fermentation, personalized customization, and digitalized production. Global partnerships and education reforms will foster talent development.

The dual strategy of "scientific evidence + AI" addresses long-standing challenges like unclear value propositions, paving the way for technological advancement, internationalization, and premiumization. Under industry leadership, yellow rice wine is poised to overcome bottlenecks, merge culture with innovation, and showcase its unique charm worldwide.
