Exploring the Diverse World of Rice Noodles in Guangxi

On February 20, residents of Dangjiu Village, Gandong Township, Rongshui Miao Autonomous County, enjoyed noodles outdoors. Women from the same village were photographed eating Luosifen by the fields on December 10, 2021. During the "Freshly Squeezed Rice Noodle Non-Forensic Skills Competition" in Dahua Yao Autonomous County, Hechi City, participants engaged in a noodle-eating contest on March 21. Contestants were also seen preparing freshly squeezed rice noodles at the same event.

Freshly squeezed rice noodles are a traditional snack popular in Hechi, Nanning, and other areas of Guangxi, beloved by both locals and tourists. The preparation technique has been included in Guangxi's intangible cultural heritage list. These noodles are handmade using purely natural ingredients through a complex and time-consuming process. It typically takes several days to complete steps such as rice selection, fermentation, grinding, dehydration, steaming the dough, and kneading before the dough is finally squeezed into strands. The noodles are then dropped into boiling water, quickly scooped into a bowl, and served with condiments, resulting in a fresh, tangy, and smooth dish.

On March 10, crowds lined up on Jiahe Road in Liuzhou to purchase fried Luosifen. On March 28, staff at a Luosifen shop in Liuzhou's Qingyun MinSheng Market served customers. At a Luosifen restaurant on Yanjiang Road in Liuzhou, the owner handed a freshly prepared bowl to a customer on March 10, 2026.

In recent years, Liuzhou Luosifen, known for its unique blend of sour, refreshing, savory, spicy, and hot flavors, has gained popularity both domestically and internationally. In 2021, its preparation technique was listed as a national intangible cultural heritage. Luosifen is not just a culinary delight but also a cultural symbol representing Guangxi's local characteristics and food culture. Today, large numbers of tourists visit Liuzhou each year to experience its distinctive Luosifen culture firsthand.

On March 25, staff at the Lei's Filtered Noodle Shop in Rongshui Miao Autonomous County's Minzu Market prepared filtered noodles. Employees at the Huiling Filtered Noodle Shop on Rongzhou Road in Rong'an County were seen adding condiments to filtered noodles on March 3. On March 28, customers enjoyed filtered noodles at a shop in Liuzhou's Qingyun MinSheng Market.

Filtered noodles are a traditional specialty in Rong'an, Rongshui, and other areas of Liuzhou. The dish is made by filtering specially prepared rice batter through a tool into boiling water, where it instantly forms into round noodles. After cooking, the noodles are served with broth, scallions, pickled vegetables, and other condiments. Known for their tenderness, slight sweetness, and affordability, filtered noodles have long been a local favorite. In 2012, the preparation technique of Chang'an filtered noodles was included in Guangxi's intangible cultural heritage list. With the development of cultural tourism and the revival of traditional food culture, an increasing number of tourists are seeking out this "intangible heritage noodle" experience.

On March 21, customers sampled rice noodles at a Guilin rice noodle shop in Dahua Yao Autonomous County, Hechi City. In Guangxi, the day often begins with a steaming bowl of rice noodles, evoking a strong sense of daily life and nostalgia for locals.
