[Click to register] Liuzhou, October 14 (Ya Chunliu, Zhou Xiaoyu) Ligao glutinous rice cake is a traditional delicacy well known to every household in Ligao Town, Liujiang District, Liuzhou City, Guangxi. A small rice cake kneads into it the festival memories of generations of Ligao people and also wraps up deep feelings for the local countryside. Recently, at the home of Zhong Huiqun, a representative inheritor of the craftsmanship for making Ligao glutinous rice cakes, a rich fragrance of glutinous rice filled the air. Zhong Huiqun poured glutinous rice flour that had been stir-fried, ground, and fermented into a basin and rubbed it apart, then poured cooked sugar syrup into the flour and repeatedly kneaded and mixed it. After mixing evenly, she added fillings such as black sesame, crushed peanuts, and winter melon candy, then filled a traditional wooden mold and pressed it firmly into shape. The entire process strictly follows ancient methods, locking in the original aroma of glutinous rice. The finished rice cakes are soft, chewy, and sweet with a pleasant aftertaste, sweet but not greasy. With one bite, the authentic local flavor fills the mouth. "Our glutinous rice cakes are made with carefully selected high-quality glutinous rice grown locally in Ligao, and every step is made entirely by hand, preserving the original aroma of glutinous rice to the greatest extent," Zhong Huiqun said. This cake-making craft has been passed down from generation to generation in the Zhong family. As the tenth-generation inheritor, she learned the full set of skills from her elders in her early years, and now she has also taught the craft to her daughter Yang Yamin, allowing this old craftsmanship to continue.

Authentic flavor and solid ingredients have earned Ligao glutinous rice cakes a stable reputation and customer base. During traditional festivals such as the Mid-Autumn Festival and Double Ninth Festival, orders reach a peak. In terms of sales channels, in addition to offline store sales and online reservations, the rice cakes also attract vendors from surrounding cities and counties to come and purchase, and many regular customers place bulk repeat orders all year round. "The handmade rice cakes here have a full rice aroma, a chewy texture, moderate sweetness, and reliable ingredients. I buy them in bulk every time. They are suitable for my family to eat and also for giving to relatives and friends," said customer Feng Yiqin. The picture shows Zhong Huiqun making Ligao glutinous rice cakes. Photo by Ya Chunliu.

Today, the small glutinous rice cake has transformed from a farm snack into a specialty agricultural, cultural, and tourism souvenir of Ligao Town. Relying on word-of-mouth praise from the public, the rice cake's fame has continued to grow. Many nearby villagers have come to learn the craft from the inheritor and participate in production and sales to increase their income. One cake carries the craft, one flavor ties to hometown feelings. Relevant departments in Liujiang District said that next, the local area will continue to strengthen the protection and inheritance of intangible cultural heritage skills, deeply explore the cultural connotations of local cuisine, promote the deep integration of traditional craftsmanship and rural industry, let intangible cultural heritage radiate vitality of the times, and empower the comprehensive revitalization of rural areas through specialty industries.
