On May 11th, the rich aroma of beef and the fresh scents of garlic chives and coriander filled the cafeteria at the Changji Houde Senior Care Home, whetting everyone's appetite. To ensure that over 500 residents could enjoy a hot bowl of beef noodles, chefs from Xinjiang Western Nu'er Catering Management Co., Ltd. began preparations early. They had spent hours simmering large vats of beef bone broth at their restaurant, which was then specially transported to the site. On location, they proceeded to mix, knead, stretch, and boil the noodles. The dough was deftly pulled and folded in the chefs' hands, transforming a single piece into numerous fine strands in just a few motions. Residents gathered around the tables in small groups, some leaning forward on their canes for a better look, others giving enthusiastic thumbs-up, all delighted to witness the chefs' fluid and skilled culinary performance. "This level of skill isn't achieved overnight; their craftsmanship is truly remarkable!" the seniors remarked to each other, their eyes fixed on the noodle-pulling "performance," their praise flowing freely.
The stretched noodles were dropped into boiling water, swirled briefly, and then promptly ladled into bowls. A generous scoop of fragrant beef bone broth was poured over them, followed by a sprinkle of bright green garlic chive and coriander, and topped with several slices of beef. Soon, bowls of steaming hot beef noodles were served. "Careful, it's hot, grandma. Take your time," a server from Xinjiang Western Nu'er Catering Management Co., Ltd. reminded gently as she placed a bowl before a resident in a wheelchair. The elderly woman picked up her chopsticks, took a careful first bite, and savored it. "The noodles are fine and soft, the broth is delicious. A single bite warms the heart," she praised.
Discussing the motivation behind this event, Jiao Feng, the head of Xinjiang Western Nu'er Catering Management Co., Ltd., stated that the company's development over the years has relied on support from all sectors of society. They have always wanted to give back through concrete actions, having previously hosted meals for sanitation workers to honor city builders. For this visit, they specially arranged for their core chefs to come on-site, intentionally cooking the noodles softer and keeping the broth warm, considering the mobility challenges of the care home residents who rarely go out. This allowed everyone to enjoy authentic, tasty beef noodles right at home. The company plans to continue focusing on and supporting vulnerable groups, spreading more warmth in the future.
