Pineapple tart was something my mum insiston making each year while she can. At 86 years old we had persuaded her not to carry out this physical hard activity but she says as long as she is able to she will. This was one made with love and enjoyed by my children ,cousins and relatives. She use to made many other varieties of CNY cookies and had to persuade her to reduce this work load due to her physical health. How many more yearscan we still enjoy her pineapple tart!
